Observation (CORRECTED DURING INSPECTION): Restaurant ran out of the usual Quat sanitizer. Remaining jug is a dispenser type that does not appear to able to dispense sanitizer at 200 ppm.
Corrective Action(s): Operator will manually dilute concentrated sanitizer to prepare it at 200 ppm. Ensure concentration is verified using test strips.
