Observation (CORRECTED DURING INSPECTION): REPEAT VIOLATION. Chicken and fish observed thawing at room temperature. Surface temperature at 4-5C.
Corrective Action(s): Chicken and fish placed immediately back into the walk-in cooler. You are not permitted to defrost food products at room temperature. Further observations will be met with progressive enforcement.

304 - Premises not free of pests [s. 26(a)]
Observation (CORRECTED DURING INSPECTION): Additional rodent droppings observed around, and underneath, the hot water tank inside the dry storage room. Some droppings noted on top of oil boxes. Some droppings present inside the bottom cabinet located in the dry storage room underneath and around the router.
Corrective Action(s): Droppings were removed with 1 part bleach, 9 parts water. Services from a professional pest control company has been requested. Please send invoices to the Environmental Health Officer by March 5, 2020.

Comments

Follow-up inspection conducted to the routine from February 14, 2020 (RPT#: JMAA-BLSUFZ). The following was noted:
Onions are no longer stored in the restroom
Bleach sanitizing pails present in both the front and back of house at approximately 100 ppm chlorine residual
General storage practices have improved as compared to the routine inspection. As discussed, all products must be covered when lids when not in use
