Observation (CORRECTED DURING INSPECTION): Rice measured at 50C with probe thermometer. One tray in two tray hot holding unit was missing and steam was escaping.
Corrective Action(s): Manager reheated rice, placed back into hot holding unit, and placed an empty tray inside unit as well. Order more trays and always have two trays in the unit, even if they both do not have food in them. Food must always be hot held at 60C/140F.

Observation (CORRECTED DURING INSPECTION): Dishwasher checked at 0ppm chlorine. Sanitizer log for dishwasher in use and shows 50ppm chlorine being tested, but not logged since October 15th.
Corrective Action(s): Manager primed machine and rechecked at 50ppm chlorine. Ensure sanitizer log is completed daily.

Routine inspection:
-health permit delivered, post in front where customers can view it
-handsinks fully equipped
-garbage cans for handwash stations have been acquired
-front freezer that was not working at time of initial inspection, now at <-18C
-walk in freezer at <-18C
-all coolers at 4C or less
-discussed food storage in walk in cooler with manager - no food stored on ground, food covered, raw chicken stored on bottom shelves
-manager showed FoodSafe certificate, ensure copies of all manager's certificates are kept on site
-quats spray bottles all at 200ppm, still being filled manually has dispenser hose not hooked up yet - ensure to follow manufacturer's instructions for mixing
-probe thermometer and IR gun on site for checking temperatures

*temp log filled out but not since October 15th, ensure log is filled out daily
*ensure that the internal temperature of chicken is being checked with a probe thermometer (74C/165F)
*recommend redoing temp log so that all staff know what the minimum food safety temperatures are
