Observation (CORRECTED DURING INSPECTION): Container of cooked chicken (individually packaged in plastic packages) inside prep cooler closest to walk in cooler was at 8 deg C. Chef said it was taken out from walk in cooler within past hour.
Corrective Action(s): Move chicken back to walk in cooler. The prep cooler (closest to walk in cooler) is constantly being opened/closed and has a very shallow storage space, which is why the internal temperature rises to >4 deg C constantly. Temperature logs indicate that this prep cooler was at 38 deg F just a few hours prior to inspection, but it is now at 50 deg C (approx 8-10 deg C). All potentially hazardous food items moved to walk in cooler, as chef indicated they were put in the cooler in the past hour. Only keep enough food in this prep cooler for 2 hours at a time, as it is not able to maintain a consistent temperature of <4 deg C during your busy lunch rushes. Any food found to be in this cooler at >4 deg C for longer than 2 hours MUST be discarded.

Cleaning of floors underneath the fryers and cooking line has greatly improved; no accumulated food debris noted
