Observation (CORRECTED DURING INSPECTION): Glasswasher had 0ppm iodine. Staff was advised to replace the empty bottle to a new bottle, so that >12.5ppm iodine could be achieved for final rinse. Resanitize all glassware washed after yesterday night's shift.
Corrective Action(s): Ensure to check the bottle on a regular basis and replace immediately once empty.

Observation: Floor/wall behind stove/grill requires cleaning. Chef had advised these areas are cleaned once a month and now it is time to clean. OK.
Corrective Action(s): Ensure these areas are cleaned and do this on a more regular basis to keep the sanitation level up.

Comments

Routine inspection conducted. Restaurant is closed every Monday in January. Chef/staff still on site for prep/cleaning only.

-Handwash stations adequately supplied. Replenish more paper towels at the bar sink before re-operating the area.
-Refrigeration temperatures all within requirement; Hot-holding not in use at this time.
NOTE: All compartments of kitchen prep coolers operating <4'C at this time. Good.
-Temperature monitoring system in place.
-High temperature dishwasher achieved 73.9'C at the plate level after final rinse.
-200ppm QUAT available in labelled spray bottles and from automated dispenser.
-Ventilation canopy hood serviced and maintained. Next service in Feb 2018.
-General food storage practice satisfactory. Dry storage room satisfactory.
-General maintenance and sanitation satisfactory, except mentioned above.
-No evidence of pest activity observed throughout.

NOTE: A new container of Whipping Cream stored in prep cooler expired as of today. Discarded at this time.
