Food Handler Hygiene
o Hand wash stations located at the entrance of each room are fully supplied with liquid soap and paper towels in dispensers
o Hand washing was observed during the inspection; clean aprons are separated from used aprons.

Storage Temperatures
o Cold holding Coolers are below 4C
o Cold holding Freezers are below -18C. Outside freezer (Seacan) -17.5C to -18.5C is used for long term freezing storage >1 week.

Food Processing and Food Protection
o Cooling - Temperatures are being monitored daily with IR guns and recorded routinely.
o Specialized Food Processing: Smoking of meats in smoker. Wood chips from commercial source. Smoker is in good repair.
Smoked products are kept in cooler after processing, at 4C.
o Approved Food Source - Food ingredients from an approved source and inspected slaughtering facilities.
o Food Storage - Food is stored in covered containers. Raw meats are stored on the lowest shelf.

Maintenance and Sanitation
o 3 compartment sink - 200ppm Quat sanitizer
o Chemical dispensers - 200ppm Quat sanitizer dispensed from tube in wall. Floors appear clean and are powerwashed with water/sanitizer daily after processing.
No excessive water build up; drains are free and clear of residue and food debris.
o Storage of chemicals is separate and away from food
o Pest control - Operators have a pest control contractor in place and there are no signs of pests at the time of inspection.
o Sanitation Plan - Operators have a sanitation plan in place
