Observation (CORRECTED DURING INSPECTION): Cold potentially hazardous food was stored above 4 degrees C in the upright display cooler in the store area, which measured between 5.8 to 8 degrees C at the time of inspection.
Corrective Action(s): Staff transferred the potentially hazardous food into another cooler to store it at 4 degrees C or less during the inspection. Ensure cold potentially hazardous food is stored at 4 degrees C or less to prevent potential growth of harmful bacteria and/or potential production of toxins.

Observation (CORRECTED DURING INSPECTION): Handsink next to the 2-compartment sink lacked paper towels. Handsink in the staff washroom had a bar of soap in addition to liquid soap.
Corrective Action(s): Staff re-stocked the above-noted handsink with paper towels during the inspection. Staff removed the bar of soap from the staff washroom. Ensure handsinks are kept supplied with liquid soap, hot and cold running water, and single-use paper towels to enable proper handwashing practices.

Observation: 1. Upright reach-in cooler in the food store was above 4 degrees C (measured between 5.8 to 8 degrees C).

2. Shatter-resistant light cover was missing over the light bulb in the second walk-in-cooler (near the back area).
Corrective Action(s): 1. Keep the upright cooler empty of potentially hazardous food until it can be maintained at 4 degrees C or less; Correct immediately. Staff transferred the potentially hazardous food into another cooler to store it at 4 degrees C or less during the inspection. Adjust/re-service the upright cooler to maintain a temperature at 4 degrees C or less; Correct within 1 week and provide an update to the Environmental Health Officer.

2. Install a shatter-resistant light cover over the light bulb in the walk-in-cooler to protect food products from any potential physical contamination from incidental glass breakage.

Ensure enough staff take a FOODSAFE Level 1 or equivalent training course to fulfill this requirement; Correct within 1 month and provide an update to the Environmental Health Officer.

Comments

Handsink within the front service area was supplied with liquid soap, hot and cold running water, and single-use paper towels.
Handsink in the staff washroom was supplied with liquid soap, hot and cold running water, and single-use paper towels.
2-compartment sink was supplied with hot and cold running water, and equipped with two sink plugs. Bleach stock bottle was available.
100 ppm chlorine sanitizer was available in a sanitizer pail and spray bottle.
Both walk-in-coolers in use were at 4 degrees C or less.
Walk-in-freezer was at -18 degrees C.
Both upright freezers (in the store area) were at -18 degrees C or less.
Refrigeration display coolers within the front service area were at 4 degrees C or less.
Refrigeration units were equipped with thermometers.
Deli slicers were observed to be in use at the time of inspection.
Staff informed they disassemble, wash, rinse, sanitize, and air dry the deli slicers at least every 2 hours between use, and after final use each day.
No signs of recent pest activity were evident at the time of inspection.
Food storage areas appeared clean at the time of inspection.
