Observation: Hole gnawed through expanding foam around wall panel, on wall beside the fridge in the 2-comp sink prep area of the kitchen. Observe mice droppings on the floor in this area.
Corrective Action(s): - Immediately clean up the mice droppings and sanitize the area with soap and bleach.
- Immediately remove the wall panel and replace it with a metal cover. Secure/seal/screw on the metal cover so there are no openings/gaps in the wall which mice can gnaw or fit through.

Comments

A routine inspection was completed:
- Coolers 4C; freezers -17C or colder; hot holding units 60C or hotter; and thermometers present.
- High temperature dishwasher had a rinse cycle of 78.6C at the plate's surface, as per min/max thermometer.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Bleach sanitizer in spray bottles and cloth buckets had [Cl2] of 200ppm. Test strips present.
- General sanitation level is good. Great improvement in this area and good job in keeping up with the cleaning. Continue what you are doing and do not stop cleaning.
- All foods stored in food grade containers; covered; date coded; foods stored in groups with raw proteins separate or below RTE foods; and all foods stored 6" off the floor on shelves, racks or platforms.
- Back door open at time of inspection, but a screen door was installed to prevent the entry of pests. Ensure the door is properly sealed to prevent pests from entering at the bottom corners. Recommended only to keep the back door open until dusk and then close the back door, as rodents become active during the dark.
- No expired foods in use or for sale. FIFO rules being followed.
- FoodSafe certified staff present.
- All surfaces, containers, cookware and utensils in good working order.
