Observation:
The waste pipe under the dishwasher sink is leaking and water is pooling in a bucket on the floor, and food debris is accumulated on the waste pipe. The pooling water and food debris will attract and breed pests.
Corrective Action(s):
Repair or replace the leaking waste pipe so it no longer leaks. Wash and clean the food debris off the waste pipe to eliminate a breeding site for flies.

Comments

A routine inspection was completed:
- Coolers 4C or colder; freezers -24C or colder; hot holding units above 60C; and thermometers present.
- Low temp dishwasher had a [Cl2] between 50-100ppm during the rinse cycle. Test strips present.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Sanitizer in spray bottles had [Cl2] of 200ppm.
- All foods stored in food grade containers; covered; foods stored in groups with proteins stored separate or below RTE foods; and all foods stored 6" off the floor on shelves or platforms.
- No expired foods in use or for sale. FIFO rules being followed.
- Exhaust canopy was professionally services in October 2023. Next service due in April 2024.
- Grease interceptor was being professionally serviced at time of the inspection. Next service due in February 2024, as per service sticker.
- No signs of pests.
- Back door was propped open, but a screen door was present to prevent the entrance of pests (flies).
- General sanitation level is satisfactory. Sanitation level of walk-in-cooler floors, the dry storage area, and the floor under cooking equipment and all prep tables and equipment has been maintained. Great work.
- Valid, FoodSafe certified staff present, certificate expires in 2028.

ACTION:
- Increase the frequency of cleaning of the exhaust filters, ceiling, and upper walls.
- Purchase and use ice wands to shorten the cooling time of sauces before they are placed in the cooler.
