- Temperature Control: Monitoring required.
- Mechanical Dishwasher: Low Temperature (chlorine): Ok.
- Wiping cloth storage: Wiping cloths, used on food contact surfaces, must be stored completely submerged, in a sanitizer solution. as discussed.
- Food Storage: All items to be kept stored in covered, food grade containers. Thawing procedures reviewed. Cutting boards are to be used on top of cutting blocks.
- Sanitary Facilities: Ok.
- Chemical Storage: Ok.
- Sanitation: See Violation Notes. Limit use of cardboard to line surfaces.
- Staff Hygiene: Routine hand washing by all staff required. (ie: after raw meat prep, etc) No bare hand contact with cooked - ready to eat food items permitted. Tongs to be utilized. Glove use discussed.
- Structural: See Violation Notes.
- Garbage/Composting/Recycling/Oil storage: Bins are to be kept closed at all times. Grease storage area to be kept clean.
- Pest Control: Rodent/Insect control discussed. Monitoring required.
