Comments

-Follow-up inspection to January 26, 2023.
-Hot holding of gravy and rice were greater than 60C.
-Mandolin slicer was found to be clean and sanitary at the time of inspection. Operator has tools to properly disassemble to blade for cleaning and sanitizing after each use.
-Raw meats were properly stored below ready-to-eat foods.
-Did not observe foods stored in opened metal cans at the time of inspection.
-Areas affected by rodent droppings have been cleaned and sanitized. Did not observe new rodent droppings in the kitchen area. Continue to monitor for pest activity and contact pest control services as needed.
-Bleach sanitizer was properly labelled. Ensure containers are relabelled as needed.
-Some additional cleaning required in the walk-in cooler. Shelving units were still observed to have some mould growth.
