Observation: 0 ppm chorine residual detected at the dish surface after the rinse cycle of the low-temperature chemical dishwasher.
Corrective Action(s): Operator called dishwasher technician at time of inspection to schedule a service.
Manual warewashing to be done in the three-compartment sink in the meantime. OK - facility offers takeout pizza and wings only.

Comments

- Deep cleaning has been completed. No mouse droppings noted at time of inspection. *Please ensure to monitor for pest activity on a daily basis, removing droppings and disinfecting affected areas as necessary.
- Pest control contract has already been in place. Servicing 2x a month.
- Operator has sealed a hole next to the walk-in cooler which was observed to be the main entry point. Continue monitoring and sealing entry points as needed.
- Unused cooking equipment has been cleaned and sanitized. Storage racks have been re-organized and are no longer blocking access to the back hand washing sink.
- Reminder to keep lowest shelves of racks as empty as possible, or store all items in storage bins on the racks.
- Mop sink no longer being used to store items and is easily accessible for filling/dumping mop bucket as needed.
- Bleach sanitizer solution for sanitizing food-contact surfaces available at 100 ppm (chlorine residual). Wiping cloth stored in sanitizer solution - good.
- Dishwasher has been cleaned, however servicing needed as 0 ppm chlorine residual was detected after the rinse cycle (see violation code 308 above). Staff to continue manually washes dishware in 3-compartment sink in the meantime. Facility is take-out pizza and wings only.
- Operator onsite had valid FOODSAFE level 1 certification.
- Note: Facility will be changing name back to original (Top In Town Pizza) in about two weeks.
