Routine Inspection:
All hand washing stations fully equipped with liquid soap, paper towels and hot/cold running water.
All temperatures met health requirements:
- Coolers maintained at or below 4 degrees Celsius (40 degrees Fahrenheit).
- Walk-in freezer maintained at -20.8 degrees Celsius.
- No hot holding at the time of inspection. Ensure temperature for hot holding is maintained at or above 60 degrees Celsius (140 degrees Fahrenheit). Food must be cooked/re-heated to at least 74 degrees Celsius before being placed into the hot holding unit.
Thermometers present in all cold holding units. Probe thermometers available onsite.
General food storage very good at the time of inspection:
- All food items covered and protected from contamination.
- All food items stored at least 6 inches off the floor.
- Storage rooms organized.
High temperature dishwasher sanitizing with 71.9 degrees Celsius at dish level.
QUAT sanitizer in all spray bottles = 200 ppm.
Ice machine maintained in a sanitary condition.
Premise well lit.
No signs of pest activity at the time of inspection.
Ventilation canopy maintained in a sanitary condition.
Washroom clean and sink fully equipped with liquid soap, paper towels and hot/cold running water.
All tools, equipment and utensils stored and maintained in a sanitary condition.
Overall cleanliness and maintenance very good.
