Observation: Ice machine & flour containers are not maintained in a sanitary manner.
Correction: Empty the contents, clean, sanitize and air dry the noted items.

Observation: Long white cutting boards on line coolers were very discoloured. Staff stated they clean and sanitize regularly
Correction: These require a deep clean and sanitize. If discolouration does not significantly improve, these may require planing. Due: Thursday Jan 23 2020
Comments

Items in progress from last inspection:
- Deep clean of kitchen and bar. Mechanical ventilation due for cleaning as of tomorrow, highly recommend enlisting a company (such as one that does mechanical ventilation) to do a pressure wash with a degreaser. Cleaning due by Thursday Jan 23, 2020 or the soonest reasonable appointment with a professional cleaning company.
- Deep clean of line cutting boards. Staff stated a professional is booked to come in this evening to do this.
- Many items on the floor not needed for operation removed but other areas such as under stairs storage is still in progress. Due Thursday Jan 23, 202
- Repair of recieving doors to exclude pests
- Patching of hole in wall under staff room hand washing station. Extension given until Monday Jan 27, 2020.

Corrections Noted:
√ Line coolers both at or below 40F (staff stated that tech came in and found that lines were frozen on the roof. Unit was thawed and reset.)
√ Dichlorvos strips and traps with mice have been removed
√ Ice wand wrapped in freezer now protecting it from contamination
√ Bar glass washer sanitizer bottles have been changed with new ones (caps have been left on and holes just large enough to fit line in have been drilled as per recommendation)
√ Sanitizer bottles cleaned and labelled
√ Temperature logs have been updated to include required temperatures and sign off for staff requiring them to notify management if required temperatures are not met
