Observation: - Prep cooler and freezer insides, doors, door seals, door handles, and drawers were greasy and had accumulation of food debris.

- Accumulation of food debris also noted in the following areas:
- Walk-in cooler floors and shelves
- Kitchen floors in hard-to-reach areas

- Area around ice machine was also not maintained in sanitary conditions
Corrective Action(s): Deep cleaning and sanitizing required for all items and areas noted above.
Ensure deep cleaning occurs at least once a week.

Observation: Lid for dry ingredient bin (for flour) is made from corrugated plastic.
Corrective Action(s): Corrugated plastic is not suitable for use as kitchen equipment, as it cannot be easily or properly cleaned and sanitized, and is not intended to be reused as kitchen equipment/a food-contact surface.
Discard corrugated plastic lid and replace with proper food-grade, easily cleanable lid.

Comments

- Hand washing sinks were properly supplied with hot and cold running water, liquid soap, and paper towels
- Bleach sanitizer solution available at 100ppm (chlorine residual). Wiping cloths were properly stored in bleach sanitizer solution in between uses.
- All coolers were measured at 4C or colder
- All freezers were measured at -19C or colder
- Bar dishwasher reached above 71C at the dish surface during sanitizing rinse cycle - good.
- Main dishwasher reached above 71C at the dish surface during sanitizing rinse cycle - good.
- Dough machine and interior of ice machine were maintained in sanitary conditions. Ice scoops properly stored.
*Please ensure to deep clean and sanitize the insides, doors, and door handles of coolers regularly.
