A routine inspection was completed: - Coolers in main kitchen were 4C or colder; freezers in main kitchen and dry storage room were -14C or colder; hot holding units above 60C; thermometers present; and temps recorded daily. - High temperature dishwasher had a rinse cycle temperature of 76.7C at the plate's surface as per max/min thermometer. - Quats sanitizer in spray bottles and in cloth buckets had 200ppm strength. Test strips present and strength recorded. - All foods stored in food grade containers; covered; labeled; date coded; foods stored in groups with proteins below RTE foods; and all foods stored 6" off the floor on racks and shelves. - No expired foods in use. FIFO rules being followed. - General sanitation level is good. Exhaust canopy is clean and ice machine is professionally cleaned twice a year (last time done in August 2022). - No signs of pests. A professional pest company services the premises twice a month. - FoodSafe certifide staff present. - All surfaces are in good working order. - All violations from previous inspection have been corrected. **Ensure to contact the exhaust canopy cleaning company to service and clean the system, as the service sticker indicates it shall be done this month.**
