Observation (CORRECTED DURING INSPECTION): Build up of food debris on scoops.
Corrective Action(s): Ensure to wash and sanitize scoops after each use. Rinsing under water is adequate if it is properly protected from contamination and cross contamination.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: The high temperature dishwasher (stationary) achieved 66C at the plate's level during the final rinse cycle after three cycles. The staff stated that they are currently using the dishwasher to sanitize equipment. This is an ongoing issue.
Corrective Action(s): 1) Fix or replace the high temperature dishwasher. The dishwasher must achieve min 71C at the plate's level during the final rinse cycle in order to properly sanitize food contact surfaces. Correction date: October 3rd, 2017
2) Use the two compartment sink for manual dishwashing. Fraser Health poster was given at the time of the inspection. Manual dishwashing of utensils and equipment is acceptable based on the operation activity.
3) Obtain a probe thermometer in order to monitor the dishwasher's final rinse temperature. Record daily (ie. beginning of the shift). Keep records (min three months) for review by the health inspector.

Observation: 1) Missing ceiling tile above the back handwashing station.
2) Leaky faucet at the mop sink.
Corrective Action(s): 1) Proper install ceiling tile in the area noted above.

Comments

- General sanitation is good
- Handwashing station stocked with cold/hot running water, soap, and paper towels.
- All coolers (display, undercounter, walk in) < or = to 4C
- Ensure to replace the ice baths regularly to keep cold items cold (ie. coconut water)
- All freezers (undercounter) < or = to -18C
- Two compartment sink available for manual dishwashing. Please follow the proper manual dishwashing procedure: 1) wash 2) rinse 3) sanitize 4) air dry. Quat sanitizer available at 200 ppm solution.
- Surface sanitizer was available in spray bottles at 200 ppm Quat.
- Ice machine is clean. Scoop stored on hook inside the machine.
- Dry storage area is good.
- No signs of pest activity.

Note: The high temperature dishwasher is repeatedly not meeting the minimum temperature to sanitize food contact surfaces. You must monitor the dishwasher. Repeat violations will lead to stricter enforcement and/or violation tickets. Correction order issued at the time of the inspection.
