Observation: The food safety plan and sanitation plan for 'It's Yumis' cookies has not been provided to Fraser Health. One of the partners in Good Day Sunshine Cafe also manufactures 'It's Yumis' baked products at another location, and has been requested on more than one occasion to provide the fsp and sp.
Corrective Action(s): Provide a written food safety plan and sanitation plan for 'It's Yumis' baked products and a written sanitation plan for the premises where the product is produced.

Comments

Generally well maintained & operated. Sanitation is good. Refrigeration measures < 4 C, with the above noted exception. Freezer temperatures measure < -18 C. Hot-holding measures > 60 C. Spray sanitizer measures 200 ppm Cl. Dishwasher final rinse temperature measures 72 C.

Cleaning and sanitizing procedures for the Kombucha beverage dispenser must be obtained from the manufacturer, Healthy Hooch, and kept on premises. Until then, the dispensing nozzles must be cleaned and sanitized after each customer to prevent potential contamination from customer to customer via the dispensing nozzle.
