301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation: - One cutting board was heavily stained and had deep grooves/cuts.
- Dough mixer and grinder were not cleaned and sanitized after use - old food debris present.
- Trays that had been washed still had food debris left on them
Corrective Action(s): - Discard cutting board and replace with a new one. Deep cuts in surfaces cannot be easily cleaned and sanitized.
- All equipment must be cleaned and sanitized after each use and never left overnight uncleaned.
- Ensure dishes are properly washed and sanitized - there should be no leftover food debris left on equipment after they have been washed

Observation: Small amount of mouse droppings were found in dry storage room.
Corrective Action(s): Remove droppings and sanitize affected areas with a strong bleach solution. Organize the dry storage room so that droppings can be easily seen and cleaned on a daily basis.

- Pull out all equipment in order to clean and sanitize floors underneath equipment and in hard to reach areas.
- Fridge/freezer doors and handles must be sanitized daily.
- Interiors of refrigeration equipment require cleaning
- Food storage bins require cleaning and sanitizing (lids, insides, and outsides)
- Walls/backsplashes require cleaning
- Ventilation exaust hood baffles require cleaning

Observation: Display cooler for sweets was measured to be at 10C.
Corrective Action(s): Staff called repair technician at time of inspection - servicing scheduled for today. Email today's invoice to Ying.Tan3@fraserhealth.ca. Ensure display cooler is capable of maintaining temperatures at 4C or colder.

Comments

- Hand sink was supplied with hot and cold running water and liquid soap. Staff supplied sink with paper towel at time of inspection.
- Walk-in cooler and prep cooler were measured to be below 4C
- Freezers were at or below -18C
- No hot holding at time of inspection
- Dishwasher reached 71C at plate surface level during rinse cycle
- Bleach sanitizer solution was available at 100 ppm in a bucket. Ensure all wiping cloths are stored in this solution in between uses.

*General sanitation requires improvement.
