Observation (CORRECTED DURING INSPECTION): Glasswasher had 0 ppm Iodine when tested. The Iodine sanitizer container was empty at the time of the inspection.
Corrective Action(s): Corrected during the inspection. Check every day at least once and before opening.

Observation: See code 301- Glasswasher not working properly. Repair so that it can maintain 12.5-25ppm of Iodine and call for a re-inspection. Use the kitchen dishwasher in the meantime.

Comments

-Proper records are not being kept for the glasswasher, dishwasher and sink and surface sanitizer. Numbers recorded for the sanitizers do not match up with the appropriate test strips. Re-training is needed for staff. Discussed during the inspection.

Hand sinks were supplied with hot and cold water, soap and paper towels.
All coolers were < 4 C.
All freezers were < -18 C.
Hot held foods were > 60 C.
Temperature records were up to date.
Reviewed cooling practices with the head chef.
The dishwasher had 100 ppm chlorine.
Lactic Acid/ DDBSA sanitizer solution was measured at 700 ppm DDBSA/ 1875 ppm Lactic Acid.
No evidence of pests. A professional pest control company is onsite regularly.
Staff are FoodSafe Level 1 certified.
General sanitation was satisfactory.
