Comments

A routine inspection was completed:
- Coolers 4C or colder; freezers -21C or colder; hot holding units above 60C; thermometers present; and temps recorded daily.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- 3-comp sink for manual warewashing present. Quat sanitizer used.
- Quats sanitizer in spray bottles and at 3-comp sink had strength of 200ppm.
- No expired foods for sale or in use. FIFO rules being followed.
- All foods stored in food grade containers; covered; labelled; date coded; foods stored in groups; and foods stored 6" off the floor on racks or platforms.
- Non-foods stored separately from food items.
- Valid, FoodSafe certified staff present.
- General sanitation level has improved. Especially under equipment, retail racks, and tables.
- Found dead mice on sticky boards in the retail areas. Monthly monitoring being done by a professional pest company. Reviewed the last 2 reports, no indication of mice caught.

ACTION
- Increase the frequency the floors, under tables and racks and shelves (in the retail and back areas) are being cleaned. Use a flashlight to see under these areas when cleaning, and have staff on their knees to look as they sweep.
- Staff shall inspect the glueboards under items, as they clean. If they notice mice caught on the glueboard, immediately call your pest company to remove it.
- De-clutter and organize the back room so all unnecessary items are thrown away, and all items are stored 6" off the floor. This will allow easier cleaning and not provide a good environment for mice to hide and live in.
