Observation (CORRECTED DURING INSPECTION): Wiping cloths that appeared to have been used were observed on the prep cooler counter. *Repeat Violation*
Corrective Action(s): A bleach water sanitizer was prepared at 100 to 200 ppm chlorine. Wiping cloths were placed into bleach water sanitizer. For a 100 ppm chlorine sanitizer, add 1/2 to 1 teaspoon of unscented household bleach for every 1 litre of water. Change as often as needed to maintain this effective concentration (e.g. solution should be changed if it appears soiled). After wiping sanitizer onto a surface, allow the surface to dry completely. A poster with information on preparation of sanitizer was provided to the operator.

1. Mildew/biofilm observed in the interior of the ice machine.
2. A knife had fallen on the floor at the time of inspection and staff were observed re-using the knife without properly washing and sanitizing it. *CORRECTED*
3. Equipment/utensils in storage were observed with food debris (glasses in front area, colanders in back) )

Follow up to Rpt # MBEK-AZXR9G

Potentially hazardous food items were properly stored in a cooler at 4 degrees C or less. Internal temperature of probed foods measured at 4 degrees C or less.
Bean sprouts stored in an ice bath.
Equipment/utensils/food contact surfaces in sanitary condition.
Frozen spring rolls were stored in a closed bag.
Scoops are stored safely outside of food product
Dry storage items stored off the ground on shelving
Home depot bucket is no longer in use for food storage
Personal items stored in a separate area away from food
Newspapers and cardboard are mostly removed--few areas remaining. Cardboard was removed from dry storage area during the inspection.
Notes:
1. Latex gloves were observed in use for food preparation. Manager removed latex gloves from food preparation area at the time of inspection and provided nitrile gloves.
2. Reminder as of July 29 2013, all FOODSAFE Level 1 certificates issued in BC have a five year expiry date. FOODSAFE Level 1 certificates issued prior to July 29 2013 are valid until July 29 2018.
3. Water is still leaking into the bottom of the prep cooler. Ensure that cooler is serviced and water is no longer leaking into the internal cavity. Follow up inspection to be conducted within 1 month.
