Observation: 1. An open can of ketchup was stored in the walk in cooler.
2. In walk in cooler, there are containers of food without proper lid covers.
Corrective Action(s): Ensure all food in storage is protected from contamination by storing in food grade containers with lids or food grade covers. Open cans of food will rust and contaminate the food. Ensure to move all open can food products to food grade containers. Correction required today.

Observation: Back screen door is ripped and requires repair to prevent entry of pests.
Corrective Action(s): Apply repair to back screen door to prevent entry of pests. Repair required in 2 weeks.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: General cleaning needed in hard to clean areas under food storage shelves and near equipment like the vegetable slicer. Food debris and grease build up observed. Food spills and clean up required near back entry door and along the FPR wall near the hanging knives.
Corrective Action(s): Ensure to wash and sanitize these areas regularly to prevent food contamination and attracting pests. Correction required in one week.

No signs of pests at the time of inspection.
Hot and cold water available.
Dedicated hand sinks with liquid soap and paper towels available.
Staff demonstrate good personal hygiene and sanitary hand washing.
Washrooms are sanitary with fully stocked hand sinks.
Food is from an approved source.
Equipment in good working order.
Temperature holding is adequate and in use with accurate thermometers.
Take out containers and utensils are sanitary.
3-compartment sink in use. Bleach sanitizer in use at 200 ppm available in bucket.
Note: Ensure to make a bleach solution at the beginning of the shift to ensure it is the right concentration every day.

Dishwasher final rinse at 71 C at the plate. Manifold displays 184 F. This unit requires one initial run to warm up at the start of the shift.
Valid Permit posted in conspicuous location.

Note: There are three small sinks available for staff to use.
Ensure the sink dedicated for hand washing is not used for anything else such as food preparation or drinking water.
