- Great improvement on general sanitation and keeping temperature log for cooling, hot holding and refrigeration units & dishwasher
- Temperatures of all refrigeration units meet regulatory requirements (<4C for coolers, <-18C for freezers)
- High temp dishwasher measured >71C at plate's surface
- Handsinks are maintained with hot & cold running water, liquid soap and paper towels
- Observed 2 whole chickens being cooled in ice on a rack. Please keep the cooling process in the cooler.
- Hot holding (gravy) measured >60C
- Storage area was kept clean
- Foods are stored in a manner that prevents cross-contamination (raw meats are stored in one cooler and produce and other food items are stored in other coolers)
- Wooden cutting board is not shared between raw meats and produce
- Eggs are clean and without cracks
- Staff have FoodSafe training

ATTENTION:
- No chlorine residual detected in the sanitizer bucket & spray bottle. The operator was directed to prepare new solution. Please obtain chlorine test strips to ensure that 100-200ppm chlorine is maintained at all times
