Observation: 1) Numerous scoops and bowls found left in product bins
- Always use proper scoops with handles. Store scoops outside of the product to prevent contamination
2) Ice wands stored in freezer used for many other food products. No cover or protection.
- Remember your ice wands are food contact surfaces. If they are dirty, your food will also become dirty. Use a food grade bag or designated area for storing these wands. Ensure you always wash, rinse, and sanitize after use

3 compartment sink properly set up with 100ppm chlorine sanitizer found in 3rd sink
Multiple sanitizer rag buckets with 100-200ppm chlorine solution found around kitchen

Sweets cooler has frozen trays, with air temperature up to 10-11C on upper shelves. Product temperature varying widely. Trays of gulab jamun are switched out to back coolers every hour.
Note: this cooler is scheduled to be replaced in 2 weeks. Good! Ensure product temperature is maintaining 4C or below at all times.
Temperature monitoring records on site and well maintained.
Observed rapid cooling of gravies at time of inspection - ice wand being used. Please see above note about storage of these wands
General sanitation of facility satisfactory. Clutter slightly reduced from last inspection.
