Observation (CORRECTED DURING INSPECTION): Dried on food soil still noted in the "cleaned" tomatoe slicer that was noted on the cleaned equipment/ utensil rack.
**Issue corrected during the inspection.** Supervisor removed the tomato slicer from the cleaned rack and placed it in the filled wash sink of the 3-compartment sink during the inspection.
Corrective Action(s): Please ensure after washing all in-use equipment and utensils, do a visual check to ensure they are properly washed and sanitized prior to storing away.

Observation: Black buildup noted on the floor in the baking area, by the dishwashing area and near the hot water tank.
Date to be corrected by: March 20, 2022
Corrective Action(s): Wash, rinse and sanitize the buildup of black debris in the aforementioned areas. When sweeping and mopping the floor, do not forget the hard to reach areas and corners of the floor.

Observation: 1. Leaking observed (result in pooling water) below the sandwich prep reach-in cooler. As per Supervisor, Manager is aware of issue and has called in this issue.
2. Water not draining in the hand wash sink in the staff washroom.
3. Water dripping was noted on the ceiling in the baking area.
Date to be corrected by: March 25, 2022
Corrective Action(s): 1. Have the sandwich prep reach-in cooler service to fix the leaking issue. Mop the pooling of water below the unit frequently until the unit is fixed. Pooled water may become an attractant or breeding grounds for pest. May also become a slipping hazard for employees.
2. Service/ fix the hand wash sink in the staff washroom.
3. Service/ fix the dripping noted on the ceiling in the baking area. Please have issue fixed and repaired to avoid a slipping hazard and contamination to food when food is being handled around that area.

Observation: Noted a spray bottle of window cleaner with no name label by the 3-compartment sink.

Routine inspection conducted today -

Handwash stations were all accessible, equipped with hot and cold running water, liquid soap and paper towel.
QUAT sanitizers were available throughout the preparation area - all noted with 200 PPM QUAT.
All refrigeration units were at ≤ 4C during the inspection.
The walk-in-freezer was noted at ≤ -18C during the inspection.
Thermometers were noted in all cold hold units.
All hot hold units were holding food > 60C during the inspection.
Facility has a high temperature dish machine - the rinse temperature was noted at 87C at the plate level.
No signs of pest noted during the inspection.
