Observation (CORRECTED DURING INSPECTION): No food grade sanitizer solution was available on site for sanitizing the utensils/prep tables/food contact surfaces. Staff prepared bleach solution (100ppm) during inspection.
Corrective Action(s): Ensure that a food grade sanitizer is used for sanitizing the dishes/utensils/food contact surfaces after the washing/rinsing step in order to achieve adequate sanitation. It is not recommended to use vinegar for sanitation.

Routine inspection conducted.

Observations:
- Facility offers food sampling (grapes, fruits) and conducts food processing - cut and wrap fruits/produce.
- As per the person in charge, food samples are generally prepared in small quantity that are served within 4 hours.
- Handwash sink available in food processing area with adequate supply of hot and cold running water, liquid soap and single use paper towels.
- 2 compartment sink is used for washing produce and warewashing alternatively.
- Cutting boards, knives were stored in sanitary manner.
- Facility was using vinegar as a sanitizer.
See violation above.
- Reach in cooler was maintained at 4C. Processed fruits (cut and wrapped) were stored in the cooler.
- Walk in cooler recorded at 3C.
- All food products were stored 6" off the floor.
- No signs of pest activity noted during inspection.
- Certified pest control company conducts monthly checks.
- Mechanical traps were present throughout the facility.
- General sanitation of the facility was satisfactory.

Note - Old cutting board (with centre hole) was stained and worn out. Staff uses a new cutting board during food processing. Ensure to replace cutting boards once they are heavily stained/worn out. DO NOT USE the old cutting board for food processing.
