Observation (CORRECTED DURING INSPECTION): Quarter pounder hamburgers on third clam shell not being fully cooked, coming off the grill with blood coming out. Internal food temperature ranging between 60C to 74C depending on location on grill and where temperature probe is located.
Corrective Action(s): This unit is to be taken out of service until such time as a consistent cook temperature can be achieved in all burgers before being placed in the hot holding unit.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Three compartment sink is overflowing with bubbles (into rinse sink and onto floor). Employee was adding hot water to the auto feed sanitizer in the third sink.
All three compartments of the triple sink were dirty and had grease accumulations that are thick enough to leave a visible of debris when scraped.
Corrective Action(s): Three compartment sink needs to be thoroughly cleaned and sanitized before any further dishware is processed.
Staff need ongoing training in proper ware washing, including the need to ensure that the sinks are cleaned and sanitized before proceeding, the correct temperatures for ware washing, rinsing and sanitizing of dishware etc.

Food spills, splatters in food prep and area, under and behind equipment, inside cupboards and shelves.
Mould accumulations in grouting around both the hand sink and the dishwashing sinks and tiles.
Corrective Action(s): Premises needs a thorough cleaning where food spills, and debris.
