HAZARD RATING FOR YOUR FACILITY: Moderate (16-29) Total Score = 30
Critical Hazards: Total Number: 2
205 - Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
Observation (CORRECTED DURING INSPECTION): [Repeat violation]: temperature control practices do not appear to have improved since last inspection. A significant amount of par-cooked meat, as well as large quantities of bean sprouts and chopped vegetables, were left out at room temperature. Several items were again approaching ambient temperature.
Corrective Action(s): Ensure potentially hazardous foods are kept either cold (4 C or below) or hot (60 C or above). Do not leave these out on countertops or sitting in buckets/bowls with no timeframe for use, as this may allow growth of harmful microbes and potential toxin formation. Final warning given - further violations will result in the issuance of correction orders and/or ticket penalties.
Violation Score: 15

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): [Repeat violation]: Several peelers and other utensils/tools were observed to be stored in dirty condition in the clean tool containers.
Corrective Action(s): Re-washed during inspection. Final warning given - ensure all utensils, knives and pieces of processing equipment are thoroughly cleaned and sanitized after use. Do not store dirty items in the clean containers. Further violations will result in the issuance of correction orders and/or ticket penalties.
Violation Score: 15

Non-Critical Hazards: There are no non-critical hazards.
