209 - Food not protected from contamination [s. 12(a)]
Observation: During time of inspection, various poison rodent bait was located underneath dish pit.
Corrective Action(s): - Remove all rodent baiting containing poison in food premises.
- Poisons should not be used in food premises as it may potentially contaminate food products.
- Follow all Pest Control Operator recommendations and use their pest control measures expertise.

305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)]
Observation: - During time of inspection, it was noted that that pass through from kitchen to front service area was not properly sealed with metal sheeting/ flashing. This provides an entry point for pests such as rodents.
Corrective Action(s): - Ensure that all gaps are sealed in facility to prevent entry of pests.
- Pass through must be covered and sealed in a durable and adequate manner. Currently sealed with sticky traps and some wire mesh with grid pattern of >1/4" which is not durable or adequate.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation (CORRECTED DURING INSPECTION): During time of inspection, general cleaning has been done throughout the premises. However, more thorough cleaning is required, especially in the following areas:
1. On wall surfaces in walk-in cooler (corrected during time of inspection)
2. On wall surfaces within prep cooler
3. On shelving in dry storage area
Corrective Action(s): - Ensure to employ a deep clean throughout facillity and focus on hard to reach areas (as noted in 'Observation')
- Facility must maintain premises in sanitary condition daily.
Correction date: 1 week (July 17 2018)

311 - Premises not maintained as per approved plans [s. 6(1)(b)]
Observation: Handwashing station not available where hard scoop ice cream is displayed. Original plans were approved with condition handwasing station was installed.
Corrective Action(s): - You must install handwashing station in front service area where hard scoop ice-cream is displayed.
- Adequately supplied handwashing stations must be available in convenient locations in facility to facilitate with proper handwashing to prevent transmission of food borne pathogens (for example: to prevent spreading germs and bacteria that can cause illness)
- Environmental Health Officer during last inspections determined that the one handwashing station in kitchen was not sufficient for staff to wash hands frequently. Another one must be available where ice cream is served.

Comments

Follow up to inspection report MTRG-B2DTLL.
The following was noted during time of inspection.
- Prep cooler #2 has been emptied out and staff and operator informed it will not be used. Operator informed Environmental Health Officer (on telephone conversation during the time of follow up inspection) that a new cooler will be installed in place of non- functioning cooler. This new cooler will be able to maintain adequate cold holding temperatures at all times.
- Dough mixer area has been cleaned.
- Commercial fume hood/ canopy has been cleaned.
- Dry storage area has been cleaned.

Notes:
- Foodsafe certification expiring for any staff that has taken Foodsafe on or prior to July 18 2013. Note that, in the operator's absence, at least once staff member on-site per shift must have Foodsafe certification. For more information refer to www.foodsafe.ca
