Observation (CORRECTED DURING INSPECTION):
Found a carton of cream sitting on the counter top, in the kitchen, at room temperature. Bacteria will grow in the cream at room temperature.
Corrective Action(s):
Immediately put the cream into a working cooler and store it there at all times. Only take the cream out when needed, then put it in the cooler immediately. During the inspection, staff put the cream into a cooler.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation:
1) The exhaust canopy and filters have some accumulation of grease and dust on them. The exhaust canopy and filters should of been professionally cleaned and serviced in August 2023, as per the service sticker. This could create a fire hazard as food and grease has built up.
2) Accumulation of food and grease found on floors at the base of walls, behind and beneath the cook station and dishwasher. This will attract and breed pests.
Corrective Action(s):
1) Immediately call and schedule a company to professionally clean and service the exhaust canopy and filters.
**Correction date: Oct. 31/23**
2) Wash and scrub the floors, especially along the base of walls behind and/or beneath the cooking station and dishwasher to remove the food and grease. This shall be done every night to prevent pest problems.

Observation:
The floor in the kitchen has areas where the paint has chipped or worn away, and unsealed cement is exposed. Unsealed cement will absorb water and grease, and is not cleanable. This will attract and harbor pests.
Corrective Action(s):
Repaint or reseal the kitchen floor so it is smooth, durable, sealed, and cleanable.

Comments

A routine inspection was completed:
- Coolers 4C or colder; freezers -21C or colder; hot holding unit 60C or hotter; and thermometers present.
- Low temperature dishwasher had [Cl2] of 50ppm during the rinse cycle.
- Bleach sanitizer in cloth buckets and spray bottles had [Cl2] of 200ppm.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- All foods stored in food grade containers; covered; labelled; date coded; foods stored in groups with raw proteins separate or below RTE foods; and foods stored 6" off the floor on shelves and racks.
- No expired foods in use or for sale. FIFO rules being followed.
- General sanitation level is satisfactory. Improvement needed in the mentioned areas.;
- No signs of pests.
- Opening in wall (across from the mop sink) is not causing/contributing to sanitation or pest concerns.
- Valid, FoodSafe certified staff present.

NOTE
- Reiterate the proper use of disposable gloves with staff. Staff MUST wash their hands with soap and warm water prior to putting on gloves. Gloves shall only be worn to complete 1 task, then they must be removed and a new pair used for a new task.
