Observation: One of the hand washing station in the corner was not draining properly. All hand washing stations must be in good working order at all times.
Corrective Action(s): Required operator to repair the sink so that it can drain properly.

Observation: Observed rodent droppings throughout the area:
1. Underneath prep tables
2. Underneath display cooler, space provided for technicians to work on electrical and gas lines.
3. Along the wall lines in the back cooking area
Found a dead mouse in one of the display coolers' space underneath.
Corrective Action(s): Required operator to:
1. Clean and sanitize all areas mentioned above
2. Remove the dead mouse and droppings; ensure to safely remove droppings by wetting them as aerosols may contain pathogens
3. Provide a cover for the space underneath display coolers as it provides optimum harbourage areas for rodents.

Observation: 1. Food debris and grease noted underneath and behind cooking equipment; all areas must be cleaned regularly to remove any water/food source for pests.
2. Space under display coolers had large openings (access to electrical and gas lines for technicians); any potential harbourage areas must be blocked off and maintained. This area is warm and easy access to food and water, which is the optimum location for pest harbourage. Found a dead mouse in one of the coolers' space underneath.
Corrective Action(s): Required operator to clean the areas noted and place a cover for those entrances. The cover should be removable for cleaning and to provide access to technicians. Remove the dead mouse, clean and sanitize the area. Remove all droppings and potential food/water source

Hot and cold running water available at all sinks
High temperature dishwasher in good working order; detected 75.6 C at plate level after final rinse cycle.
QUAT sanitizer dispenser in good working condition; one of the dispensers in the corner single sink not hooked up at the time of inspection. No concerns as the other one was working properly.
All coolers at 4 C or lower; all freezers at -18 C or lower;
All hot holding units at 60 C or higher.
