Observation: 1. *REPEAT* (Since March 2023) Sandwich preparation station not holding temperatures of 4°C or less.
**Corrected during inspection** Potentially hazardous foods removed at time of inspection.

Products stored in unit are time controlled, 2 hours maximum. All products are to be timestamped or discarded as it cannot be ensured the time products are not at refrigeration temperatures.

2. *Repeat* (Since Dec 2022) High temperature mechanical dishwasher is not in operational condition.
Manual warewashing procedures done in interim, however, two compartment sink is a temporary measure.
Corrective Action(s): 2. Operator stated they will be installing a 3rd sink + faucet to comply with 3 compartment sinks for facility.

Observation: Bleach not available at time of inspection. Operator sent staff to purchase bleach when made known.
Correction: Always have sanitizer available and on site. Sanitizer for cleaning food-contact surfaces: 1/2 tsp bleach : 1 L clean water.

Temperatures:
Sandwich preparation table: 10-11°C

2 door display cooler: not in use; no potentially hazardous foods stored inside, awaiting meal prep chef to remove

Sanitation:
Handwash station equipped with hot/cold running water, liquid soap, paper towels, and garbage receptacle by end of inspection
2 compartment dish washing method used at time of inspection; high temperature dishwasher not working, emitting burning smell when operating.
Operator stated 3 compartment sink will be made available by start of July.
Bleach sanitizer available in large mixing bowl and spray bottle. Measured 200ppm.

Storage:
All food items were stored at least 6" off the floor.
Chemicals and cleaners were stored separate from food preparation areas.

General:
Recommended for more staff to be FoodSAFE level 1 certified.
