A routine inspection was conducted, the following observations were made:
- All Coolers 4C or colder; freezer was -15C; hot holding unit was 60C; and thermometers present each cooler & freezer unit.
- High temperature dishwasher had a rinse cycle temperature of 78.4C at the plate's surface, as per max/min thermometer.
- Quats sanitizer in spray bottles was 200ppm, and bleach sanitizer in cloth bucket had [Cl2] between 100-200ppm.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- All foods stored in food grade containers; covered; labeled; date coded; foods stored in groups (dairy, cooked proteins, fruit, condiments, etc.); and stored 6" off the floor on shelves, racks and cupboards.
- No expired foods for sale or in use. FIFO rules being followed.
- General sanitation level is good. Exhaust canopy was serviced in July 2019 and next service is due December 2019. Ceiling tiles above the exhaust canopy are absent of grease and dust.
- No signs of pests. Back door has a screen door installed on it.
- FoodSafe certified staff present. |
