Routine inspection conducted:

- Walk in cooler at 1 degree C. Food is covered and dated.
- Walk in freezer at -20 degrees C
- Small reach in cooler at 3 degrees C
- Service station domestic cooler at 4 degrees C. Upper freezer unit at -13 degrees C. *Note: Please ensure freezer is able to maintain foods at -18 degrees C or less.
- Hand washing stations are unobstructed and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
- Quaternary ammonium compounds (quats) sanitizer is available in labeled buckets at 200 ppm. Wiping cloths are stored in sanitizer solution. Test strips are available.
- High temperature dishwasher measured 74 degrees C at utensil surface during final rinse (minimum 71 degrees C)
- A probe thermometer is available for checking internal temperatures of food. Cold holding and cooking/reheating temperature logs reviewed at time of inspection.
- Equipment and utensils are maintained in sanitary condition.
- Dry storage is well organized. Selection of audited nutritional supplements is within printed expiry
- General sanitation excellent. No evidence of pest activity noted.

Notes:
1. White service cooler at 6 degrees C at time of inspection. No long-term storage of food in the service cooler--rolling racks containing trays of beverages and desserts are stored here temporarily immediately prior to scheduled food service. Service cooler is designed to accommodate these rolling racks only (no shelves inside of unit).
2. It was stated that the dishwasher temperature is checked at the gauge to ensure it reaches the minimum wash/rinse temperatures prior to use. It is recommended to keep a log for the dishwasher. Template provided at time of inspection.
