Observation: Three compartment sink is being used for washing and sanitizing of equipment with hot water as sanitizer. The three compartment sink is not equiped with a heat booster or any equipment to monitor the temperature of the water.
*If three compartment sink is the desired method for washing and sanitizing, use a quats based sanitizer at 200ppm to ensure equipment is adequately sanitized. Or continue to use the large high temp dishwasher to adequately disinfect.

Observation: Large number of indian meal moths observed in the posterior bread production area. Also a large number of mouse droppings observed in the posterior bay loading area behind equipment in the posterior shelving units as well as behind equipment along the wall of the three compartment sink.
*Cleaning and sanitizing of the areas mentioned above is required on a regular basis
*pest control company must come in once a week, and an employee must accompany the pest control inspector to ensure that all areas are being addressed.
*Flour must be stored seperate or in the fridge/freezer to prevent meal moths and prevent attraction of rodents.

Observation: The back recieving doors had large gaps in which outside light was visible.
*Install a door sweep on the exterior receiving doors to prevent pest entry.
*Use steel wool to plug any gaps and prevent it from being chewed through.

Observation: A large number of pallets which were broken are being stored in the posterior receiving area.
Along with a fridge for another store. This creates a place for pests to harbour.
*Remove all equipment that is either broken or not required for the operation of the facility.
