Observation (CORRECTED DURING INSPECTION): No chlorine residual detected in the low-temp dishwashing machine (0ppm).
Corrective Action(s): Chlorine feed tubing appeared to have an air gap (or leak).
Issue resolved by eliminating the air gap and purging the tubing of air bubbles.
Dishwasher is now providing 50ppm chlorine residual during the rinse cycle.
*Ensure to check sanitizer levels for the dishwasher every day, using the chlorine test papers*

-Routine inspection of establishment:
-Operator has refurbished the uneven flooring underneath the cooking line (action item from previous inspection)
- Hand-washing basins are stocked with hot/cold water, soap, and single-use towels
- Refrigeration temperatures are ≤4o Celsius
- Freezer temperatures are satisfactory
- Chlorine food-contact surface sanitizer solution available at ≥100ppm concentration
- Chemical-sanitizing dishwasher providing ≥50ppm chlorine residual during rinse cycle
- Pest control visits are being maintained (last visit: August 2023).
- Conditions in the food premises are much-improved since previous inspection in May 2023.
