Observation: Meat was stored in a garbage bag in the walk-in freezer.
Corrective Action(s): All foods must be stored in food-grade materials. Garbage bags have chemicals which may transfer in to foods. Discontinue the use of garbage bags to store foods.

Comments

-Walk-in cooler was at 2C.
-Walk-in freezer was at -15C.
-Front meat display cooler was at 5C (defrost mode). Fish cooler was at 4C.
-Front freezer units were at -15C.
-Cleaning and sanitizing carried out in the 2-compartment sink. Sink plug present and bleach available.
-Bleach spray bottle labelled and tested at 100ppm.
-Meat cutting surfaces disinfected with bleach after each use.
-Meat cutting saw disinfected throughout the day and disassembled for thorough cleaning and sanitizing at the end of the night.
-Handwash stations accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Foods stored off the floor and covered. Customer area foods were in good condition.
-General sanitation good at the time of inspection.
-No signs of pests noted at the time of inspection.
-Washroom clean and well maintained.
-Facility will be redoing flooring in the back area. No structural changes to the facility.
