Observation (CORRECTED DURING INSPECTION): Cut vegetables at the salad bar (carrots, tomatoes, lettuce) were all above 4 deg C (varied between 7-9 degrees C)
Corrective Action(s): All vegetables to be discarded at end of lunch shift (maximum time that cut vegetables should be at >4 deg C is 2 hours before being discarded). Ensure to do the following:
1) only half fill your salad inserts before the school lunch period
2) Any remainder vegetables in the inserts at end of lunch period should be discarded. Do not re-use any leftovers from this salad bar as bacteria can be grow in potentially hazardous food items rapidly when exposed to temperatures greater than 4 degrees C. As well, there may be potential contamination by students who accidentally touch the salad ingredients. Discard all leftovers.
