Observation (CORRECTED DURING INSPECTION): Found "reheated" chicken in hot holding unit below 25C.
Observed reheating chicken in the hot holding bath, inside an insert, inside a bag. Chicken will not "steam" up to 74C in this manner. This also goes against your Food Safety Plan
Probe thermometer not in use to check reheating temperature
Corrective Action(s): All reheated products MUST be reheated to a minimum temperature of 74C before moving to hot holding. Use a thermometer to check. Ensure the plastic bag is fully submerged in water to thoroughly heat product.

Observation: Both milk dispenser units malfunctioning. Older milk bag in unit at drive through window at 8C, while milk in unit at front over 10C
Corrective Action(s): You must store your milk product at 4C or below at all times

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Quat sanitizer solution at 3 compartment sink had run completely dry, with feeder hose dry also. 0ppm product dispensing.
As a result, all quat sanitizer containers (rag buckets & sani cups) all 0ppm
Corrective Action(s): Concentrate replaced at dispenser. All containers changed at time of inspection upon request.
NOTE: no test strips available for testing concentration of quat sanitizer (chlorine test strips on site will not tell you quat levels). Acquire these for your follow up inspection tomorrow

Observation (CORRECTED DURING INSPECTION): 2 of 3 hand wash stations not supplied for handwashing. Coffee station soap dispenser had an unknown brown liquid dispensing, while front station (across from soup) had no soap.
Corrective Action(s): These sinks MUST be fully supplied for use at all times! Repeat violations of this nature will be met with enforcement action

**As discussed, milk that measured high in temperature discarded. New bags can be used for 2hrs MAX. Use your white wax pencils to monitor times. This must be maintained regardless of who's on shift until the refrigeration systems are repaired.

All hand sinks free for access and fully stocked
