Observation: Rodent droppings were observed in the staff washroom and by far door.
Corrective Action(s): Ensure facility is kept free of pests. Clean and sanitize affected areas using a 1:10 bleach solution and monitor for pests. If pest issues persist, facility may need o contact professional pest control services. Ensure tin cats are returned to their original positions (door next to wall) when moved for cleaning.

Observation: Half a box of tomatoes were found to be mouldy
Corrective Action(s): Ensure stock is properly rotated and old stock is used in a timely manner. Mould tomatoes were discarded at the time of inspection.

Comments

-Walk-in cooler was a 4C.
-Prep cooler was at 3C (top) and 4C (bottom).
-Freezer was at -18C.
-Hot holding cabinet was not in use at the time of inspection. Time tracking sheet is in use, when hot holding cabinet is in use. Items are discarded if not used within 2 hours.
-3-compartment sink used for cleaning and sanitizing. Sanitizer was tested at 100ppm.
-Both handwash stations easily accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Both sanitizer pails were tested at 100ppm and pails were properly labelled.
-Slicer was found to be clean and sanitary. Slicer was disassembled for cleaning.
-Foods stored off the floor and covered. One scoop stored inside dry ingredient container - ensure all scoops are stored in a sanitary manner.
-General sanitation satisfactory.
-Staff member had valid FoodSafe Level 1 until 2022.
