209 - Food not protected from contamination [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): 1. Noted 3 opened cans of corn in the reach-in cooler.
2. Cutting board stored in a cabinet noted with mouse droppings.
3. A large bowl of shredded lettuce being washed in running water in the mop sink.
Corrective Action(s): 1. Staff placed content of the open cans into a food safe container during the inspection. Once cans are opened, the contents must be emptied to avoid the potential of metal leaching into the food.
2. Staff removed the cutting board from the cabinet for washing in the dishmachine and will be storing the cutting board in another area until the droppings have been removed and the cabinet washed and sanitized. Do not store any open food or utensils/ equipment in an area contaminated by mouse droppings.
3. Staff remove the bowl of shredded lettuce and placed in a prep sink for washing. Do not process food in the mop sink as this is a dirty sink and should not be use for food preparation.

Observation (CORRECTED DURING INSPECTION): Noted frozen meat (still frozen when touched) thawing on the countertop at the time of inspection.
Corrective Action(s): Staff return the frozen meat to the refrigerator at the time of inspection.
Ensure to use an acceptable method to thaw food at all time to prevent potential foodborne illnesses. Acceptable method includes storing in a refrigerator overnight or placing under cold running water.

Observation: Missing ceiling tile noted by the fume hood.
Corrective Action(s): Replace the missing ceiling tile to seal off any potential entry site for pests as there is a known pest issue at the facility.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Mouse droppings noted in many areas of the premises - including but not limited to the following areas: Behind the broken freezer, below the 2-compartment sink, below the metro shelving in the dry storage area, in the cabinet below the prep station.
Corrective Action(s): All areas noted with mouse droppings must be sweeped up, cleaned and sanitized. Pests are attracted to their own fecal material and will feed on it as a food source. Clean all areas to remove the droppings as a food source. This will also help monitor if the mouse droppings noted is an pre-existing or existing issue. If after cleaning, droppings are noted again, contact an external pest control company to help with the mouse issue.

Observation: A freezer unit noted unplugged and emptied at the time of inspection.
Corrective Action(s): As per staff, freezer has been broken as of last night. A food service establishment has been approved by the specified number of equipment (i.e. refrigerator and freezer units) that are adequate to meet business need as per the floor plan. Please fix the freezer as soon as possible.

Observation: No staff has FOODSAFE level 1 certificate or equivalent in the absent of the owner.
Corrective Action(s): Ensure at least one staff on-site has FOODSAFE level 1 certificate or equivalent in the absent of the owner. Have a staff register for FOODSAFE.

Comments

Routine inspection conducted today:
Handwash stations, including washrooms, accessible, equipped with hot and cold running water, liquid soap and paper towel.
All refrigeration units were at ≤ 4C.
All freezer units were at ≤ -18C.
Organization in the refrigeration units were satisfactory - all food was stored protected at the time of inspection.
Bleach sanitizer spray bottles available - 2 bottles were noted and detected with 200 ppm chlorine residual.
At the time of inspection, both were noted in the front of house, hanging on the serving cart. Ensure to keep one in the back of house to use on prep surfaces in between preparing food.
High temperature dish machine was able to reach 74.9C on the plate level after the rinse cycle.
Deep fryer and fume hood noted in a sanitary condition. Note: Fume hood is due for professional cleaning on 11/16/2022.
Note: At the time of inspection, rice was noted in an unplugged rice cooker and the internal temperature was noted at 45.9C. As per staff, the rice was cooked 40 minutes ago and is currently being cooled before placing in the refrigerator. The rice in the rice cooker was moved into a refrigeration unit at the time of inspection.
