Observation (CORRECTED DURING INSPECTION): 3 extra large soup containers pork bone soup cooked yesterday stored in the walk-in cooler overnight at 12 deg C internal temperature -no ice baths/ice wands were used as per operator
Corrective Action(s): Discarded the pork bone soups

Use ice baths // ice wands to cool foods properly:

Step 1: 60 deg C to 20 deg C within 2 hours
Step 2: 20 deg C to 4 deg C within 4 hours

-air temperature of 15.1 deg C

Waitress Preparation Cooler:
-3 inserts are again stored above the fill-line: sprouts, cooked potatoes -internal temperatures at 12 deg C and waitress indicates they have been there for over an hour

NOTE this is a repeat infraction from August 15, 2018 and October 30, 2017 routine inspections -ticket issued
Corrective Action(s): -Discarded over 10 flats of raw eggs, a number of containers of soups

-Discarded the 3 inserts of sprouts and cooked potatoes after another hour
