Observation:
1) FRP wall panel, behind the potato cutter, is cracked and has a hole in it exposed the unsealed wall beneath it. The panel is no longer sealed, durable or cleanable. This will attract pests.
2) Raw wood panel is securing the potato cutter to the wall. The raw wood will absorb food and liquids and is not cleanable. This will attract pests.
3) The 3-comp dishwasing sink basins are missing drain plugs. Staff are unable to wash, rinse and sanitize dishes corrected and thoroughly, as sinks can't be filled up to fully submerge dishes in.
Corrective Action(s):
1) Replace the whole FRP wall panel with a new one, ensure it is securely attached to the wall and the edges sealed to prevent water, food and pests from getting behind the panel.

2) Paint the raw wood panel with a light colored paint, so the wood is sealed and cleanable.

3) Purchase drain plugs for each sink basin so they can be properly plugged and dishwashing can be done correctly.

Comments

A routine inspection was completed:
- A new store manager and staff change has occurred on Sept. 1/23.
- Coolers 4C or colder; freezers -18C or colder; hot holding units 60C or hotter; thermometers present; and temps recorded daily.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Quats sanitizer in spray bottles and in 3-comp sink had strength of 200ppm. Good.
- All foods stored in food grade containers; covered; labelled; date coded; foods stored 6" off the floor on shelves, racks or platforms.
- No expired foods in use or for sale. FIFO rules being followed.
- Non-foods (stationary, toiletries, car items) stored away/separate from food in retail area.
- General sanitation level is good. Improvement seen in the kitchen area, good work. The door handles of upright freezers in the kitchen are clean and absent of accumulated food and grease.
- Exhaust canopy and deep frying system are clean and were serviced in May 2023.
- No signs of pests.
- Valid, FoodSafe certified staff present, or they possess an equivalent certificate.

RECOMMENDATION
- Store frozen, raw proteins in separate freezers from prepackaged, frozen foods. This will improve food safety and decrease the chance of cross contamination.
- The next professional cleaning and service of the deep fryer unit is to be done in November 2023, as per the service sticker. Ensure to schedule this.
