Observation (CORRECTED DURING INSPECTION): Facility used all purpose cleaner as sanitizer. Operator informed that kitchen equipment are washed, rinsed, then air dried.
Corrective Action(s): Temporary prepare chlorine sanitizer spray bottle to measure 100-200ppm. Purchase QUATS sanitizer solution for sanitization of food contact surfaces. Educated operator on proper ware washing. All kitchen equipment and utensils must be washed, rinsed, sanitized at 100-200ppm chlorine or 200ppm QUATs, and air dried.

Observation: Rodent droppings observed to be underneath the following areas:
-Stand-up cools, dishpit area, water tank area.

Pest Control company contracted monthly. Last report on July 8, 2022 noted rodent activity within the premises.
Corrective Action(s): Clean and sanitize the aforementioned area. Follow facility's Sanitation Plan on daily sanitiation underneath equipment. Corrected by: Today.

Routine Inspection conducted today.

Handwashing sinks well equipped with hot and cold running water, liquid soap, and paper towels.
3-compartment sink available.
Prep coolers and stand-up coolers measured at 4C or lower. Stand-up freezer at back of house measured at -14C. Stand-up freezers and chest freezer measured at -18C. Hot-holding units measured at 60C or higher.

TO DO:
-Purchase additional drain plugs for 3-compartment sink.
-Keep back door closed at all times to prevent possible pest harbourage. Install screen door if necessary.
-Move portable deep fryer underneath exhaust hood.
