Wall by hand sink in the main kitchen is being re-surfaced with washable frp during the inspection.
***Food preparation cannot be carried out in this area until the repair has been completed and all surfaces (counter and meat slicer) have been cleaned and sanitized. Re-install the liquid soap and paper towel dispensers when work has been completed. Future re-surfacing of the wall behind the hand sink in the server kitchen (care side) is recommended.
There is another sink in the cooking area of the kitchen that has hot/cold water, liquid soap and paper towels in dispensers and that sink is being used for hand washing - ok.
Coolers are at 4 C or colder. Temperature records are being kept- good.
Hand washing stations in care side server area and assisted living side server area have liquid soap and paper towels in dispensers.
Hot holding food temperatures are above 60 C (mashed potatoes and food in steam hot holding cabinets (both sides)) with the exception of one food item on the care side and made today that is below 60 C but is being served within the next 30 minutes (less than 2 hours). Hot holding temperatures are being kept daily.
Quats - wiping cloths are stored in a quats solution that is automatically dispensed at 200ppm (as per your test strip). Solution is changed frequently throughout the day.
Routinely check quats concentration using test strip to verify.
Cleaning - good. Exhaust filters are clean.
Commercial dishwasher has a sanitizing rinse (82C/180F + shown on gauge and >71C measured inside of the machine). Records are being kept.
*** Please provide an accurate indicating thermometer for the bistro beverage cooler to verify the temperature is 4 C or colder.
