Observation: Small bar cooler used to store mainly small volumes of lower risk foods. There is some dairy (sour cream, cheese) in this cooler and air and food temperature is at 7C.
Corrective Action(s): Store dairy and higher risk foods at 4 C or colder in alternate fridge or lower temperature of bar cooler to 4C.

Coolers (walk in and both prep coolers) at 4C/ 40F or colder - good.
Small bar cooler by hand sink - see above.
No hot holding during inspection.
Pizzas served by the slice are discarded after 1.5 hours (2 hours maximum). Tracking board is available to time track.
Produce washed in sink using clean colander. ***Remind staff to thoroughly clean and sanitize sink prior to use.

Operator has Food Safe certificate and is on site. Reminder that certificates can be renewed if done before the 5 year expiry date.
Hand washing stations have hot/cold water, liquid soap and paper towels in dispensers.
Triple sink for utensil cleaning - quats automatically dispensed at 200ppm.
Quats 200ppm in labelled spray bottle (using wash, rinse, sanitize, and air dry method).
Keep food safety plan and sanitation plan on site.
