Observation (CORRECTED DURING INSPECTION): mobile (on wheels) cooler for raw meat too warm
raw hamburger at 9 deg C

Checked the unit and observed it was not plugged!
Corrective Action(s): Remove all the potentially hazardous foods from unit into Walk-in cooler. Ensure the unit is always plugged in!
Daily temperature log from this morning shows the unit at 2 deg C
Place back the food once the air temperature is at or below 4 deg C

Observation (CORRECTED DURING INSPECTION): "MPH Drawer" Hot holder for cooked hamburger at 51 deg C internal temperature cooked about an hour ago
Corrective Action(s): Remove and recook the hamburger. Place in another hot holder capable of >60 deg C

Adjust/service the hot holder to maintain foods at or above 60 deg C at all times
