Observation: 1) High temp dishwasher is not reaching 71C on plate surface during final rinse cycle. It must reach a temperature of minimum 71C to adequately sanitize the dishware. You may use the dishwasher to wash the dishes but the dishes will have to be dispenced in a 100ppm bleach solution in sink compartment as the final rinse step. The dishwasher mechanic will have to fix the issue, then once verified by the inspector during follow up, you may resume using the dishwasher for sanitation as well.

2) Meat slicer had food debris present and had not been used since "the morning". Meat slicers must be cleaned and sanitized minimum every 4 hours
