Observation (CORRECTED DURING INSPECTION): Observation: QUATS spray bottle used for food contact surfaces measured to be 50ppm.
Corrective Action: Re-make the quats sanitizer to 200ppm. Ensure that QUATS sanitizer is at adequate concentration of 200ppm by using test strips (test strips given to the operator) Operator mentioned that she will re-fill the quats sanitizers with freshly made batches every other day.

High temp dishwasher measured 72.5 at plate surface as per mix/max probe thermometer
